## Title: Production Supervisor - Bakery, Pastry & Ice Cream

Job Purpose

To manage and supervise daily production of bakery, pastry, and ice cream products, ensuring consistent product quality, adherence to recipes and hygiene standards, and achievement of production targets in line with brand standards.

Key Responsibilities

Production Operations

  • Supervise and coordinate daily production across bakery, pastry, and ice cream lines
  • Ensure all products are prepared in accordance with approved recipes, portion sizes, and standard operating procedures (SOPs)
  • Plan production schedules based on demand forecasts and outlet supply needs
  • Monitor baking, mixing, freezing, and finishing processes to maintain consistency and quality
  • Ensure proper use and maintenance of equipment such as ovens, mixers, proofers, freezers, and depositor machines

Quality & Hygiene Control

  • Enforce strict hygiene, safety, and sanitation standards within all production areas
  • Conduct in-process and final quality checks on all products (texture, taste, temperature, and appearance)
  • Ensure proper labeling, storage, and shelf-life tracking of all finished goods
  • Maintain compliance with HACCP, NAFDAC, and internal food safety guidelines

Inventory & Material Management

  • Track usage of raw materials such as flour, butter, cream, sugar, flavors, and packaging items
  • Coordinate with the store team to ensure timely availability of ingredients and materials
  • Monitor and control wastage by optimizing batch sizes and production processes
  • Maintain accurate documentation for ingredient issuance and product yield

Team Leadership & Training

  • Supervise bakers, pastry chefs, ice cream operators, and assistants during all production shifts
  • Train and mentor team members on recipe execution, product consistency, hygiene, and equipment handling
  • Foster a culture of teamwork, punctuality, and continuous improvement
  • Conduct performance appraisals and provide constructive feedback
