## Title: Head of Culinary Operations

Job Summary

We are seeking a dynamic and results-oriented culinary professional to join our client's team, a major player in the International Aviation Catering Services Industry. This position requires a seasoned culinary expert with a deep understanding of large-scale food production, menu planning, kitchen management, and team leadership in a high-volume catering or hospitality environment.

Key Responsibilities

  • Lead and manage culinary operations across Hot Kitchen departments
  • Oversee menu planning, recipe development, and production schedules to meet airline and client standards
  • Ensure strict compliance with food safety, hygiene, and HACCP protocols
  • Manage kitchen budgets, food cost control, inventory, and waste reduction
  • Build, mentor, and inspire high-performing culinary teams to achieve consistent operational excellence
  • Collaborate with Operations, Quality Assurance, and Flight Management teams to ensure timely, quality service delivery
  • Drive innovation, operational efficiency, and continuous improvement initiatives
  • Represent the culinary department during audits, client meetings, and operational reviews

Requirements

  • Degree or Diploma in Culinary Arts, Food Production, or Hospitality Management
  • Minimum 8-10 years' experience in a senior culinary management role within airline catering, 5-star hotels, or large-scale catering operations
  • Strong knowledge of international culinary standards and food safety systems (HACCP, ISO, etc.)
  • Excellent leadership, communication, and organizational skills
  • Proven ability to manage high-pressure environments while maintaining top-tier food quality
