## Title: Production Manager – Food Service
Position Overview
Our client is seeking an experienced and highly organized Production Manager to oversee food production operations at their busy establishment in Nairobi. The ideal candidate will be responsible for production planning, staff supervision, food quality consistency, stock control, and ensuring seamless kitchen efficiency across dine-in, takeaway, and delivery operations.
Key Responsibilities
Production Planning & Scheduling
- Develop daily and weekly production schedules based on sales forecasts and par levels
- Ensure food items are prepared, portioned, and ready for service on time
- Coordinate production for dine-in, takeaway, and bulk orders
Quality & Standards Management
- Enforce recipe accuracy and consistent product quality
- Ensure taste, presentation, and portion standards are consistently met
- Conduct routine tasting sessions and enforce recipe adherence
- Maintain quality across all production shifts
Staff Supervision & Training
- Supervise and mentor cooks, prep staff, and production assistants
- Allocate tasks and ensure prep and closing checklists are completed
- Provide continuous training on recipes, standards, and equipment use
Stock Control & Inventory Management
- Track daily raw material usage and reconcile with output
- Monitor stock levels to avoid shortages and minimize wastage
- Apply FIFO procedures, proper storage, and accurate ordering practices
- Participate in stock-taking and variance reporting
Food Safety & Sanitation
- Enforce HACCP, food safety, and sanitation guidelines
- Conduct hygiene inspections and manage cleaning schedules
- Report faulty equipment and support safety protocol training
Cross-Functional Coordination
- Coordinate with procurement, front-of-house, and delivery teams
- Report shortages, delays, or production challenges promptly
Qualifications & Experience
- Minimum 5+ years' experience in a kitchen supervisory or production role
- Experience in production, centralized, or catering kitchens is a strong advantage
- Strong understanding of kitchen operations and food preparation
